Authentic Spanish Paella Recipe on the Big Green Egg

Ingredients
For the Traditional Paella
1 tame rabbit (cut into chunks)
4 chicken thigh fillets (cubed)
4 cloves of garlic (chopped)
4 banana shallots (finely chopped)
800g fresh broad beans (podded)
1 red chilli pepper (thinly sliced)
2 sprigs rosemary (chopped)
4 sprigs oregano (chopped)
3 tbsp olive oil
50ml cognac
1 tsp grated zest of an unsprayed orange
320g paella rice
1 tsp paprika
15 saffron threads
2 bay leaves
1L chicken stock
2 unsprayed lemons (sliced)
1 bunch flat-leaf parsley (chopped)
Preparation Steps
1. Preheat the Big Green Egg
Firstly, ignite the charcoal and heat the Big Green Egg with the Cast Iron Grid to 200°C.
Additionally, while heating, prepare the ingredients: cut the rabbit and chicken, chop the shallots and garlic, pod the broad beans, and slice the chilli.
2. Brown the Meat
Continuing, heat olive oil in the Stir-Fry & Paella Grill Pan on the Big Green Egg’s grid.
Furthermore, add the rabbit, chicken, and half the garlic, browning the meat evenly.

3. Deglaze with Cognac

4. Sauté the Aromatics
